Day 3: The Enchiladas



Today I definitely learned where I get my stubbornness from, my grandpa. The whole day we spent planning, buying, and making stuff to create our very own homemade beef enchiladas. Since the day my grandpa built his add-on kitchen, he has been waiting for this day. My grandparents, Michael, and I first made a list of things to buy, then made a journey to HEB (where my grandpa thinks everything is necessary to buy). Once we got home, my grandma, brother and I got to work. My grandpa stood by making sure everything was perfect, trying to change our course of cooking to fit his fancy. Finally we sent him out because he was being a little too bossy :) Once we finished, he said there wasn't enough cheese! I laughed at him and he returned with dumping the ENTIRE bag of cheese on top! It was hilarious because he is the kindest man ever, but he definitely likes his cheese! It was a very fun family activity to cook and create something together, and the end product was fantastic.

After dinner, my brother and I took out the 4-wheeler and drove out to a place near our grandparents' house called "Lover's Leap". There's a fence that is about two feet from the cliff, that I am standing on, so it was pretty scary! I'm not sure any "lovers" have ever actually jumped from this cliff, but it's a very pretty sight to see.
